1. Map your hazards with HACCP
Every food safety system rests on a rigorous hazard analysis. Identify biological, chemical (including allergens) and physical hazards at each step, determine your critical control points (CCPs) and set measurable limits. A living HACCP plan — reviewed at every recipe or process change — is the foundation of any certification.
2. Take control of allergens
Undeclared allergens are one of the leading causes of product recalls. Keep an up-to-date allergen matrix, segregate flows, sequence production (allergen-free products first) and validate your cleaning. Labels must be re-checked at every recipe change.
3. Ensure flawless traceability
“One step up, one step down”: you must be able to trace the origin of every batch and its destination within minutes. Test your recall capability regularly — auditors will ask for it, and so will your customers.
4. Train and engage your teams
