Earning — and keeping — a food safety certification (ISO 22000, FSSC 22000, BRCGS, IFS, GLOBALG.A.P.) is more than administrative paperwork. 1. Map your hazards with HACCP

Every food safety system rests on a rigorous hazard analysis. Identify biological, chemical (including allergens) and physical hazards at each step, determine your critical control points (CCPs) and set measurable limits. A living HACCP plan — reviewed at every recipe or process change — is the foundation of any certification.

2. Take control of allergens
